Crack two eggs into a bowl and whisk them with a fork. Add a pinch of salt and pepper. Heat a little butter in a non-stick pan over medium heat. Pour the egg mixture into the pan. Stir gently with a spatula as the eggs cook until they are set but still moist. Serve immediately.
